Potato and bacon cakes

For an easy, filling breakfast or snack option, try these hearty, delicious bacon potato pancakes.

Serves: 4

Ingredients:

  • 2 cups of mashed potatoes
  • 8 to 10 slices of diced, fried bacon
  • 1 onion, diced
  • ½ a teaspoon of black pepper
  • ½ a teaspoon of salt
  • ½ a cup of vegetable oil
  • 1 egg

Method:

  1. Mix all ingredients except vegetable oil into a batter.
  2. Heat vegetable oil over medium heat in a skillet.
  3. Place 10cm disks of batter into the oil once hot.
  4. Cook disks for around five minutes for each side, or until golden brown.
  5. Remove with slotted utensil and place on a paper towel to remove excess oil.
  6. Repeat until all batter is used.
