Apple and chicken quesadilla
These apple and chicken quesadillas are a tasty variation on the classic Mexican dish that provide the perfect snack or light lunch in the warmer months.
Makes: 12 triangles
Ingredients:
- 4 tortillas
- 1 cup cooked, shredded or chopped, chicken meat
- ¼ lb cheddar cheese, sliced or grated
- 1 apple, sliced
- 1/4 cup salsa
Method:
- To begin, heat a large pan on a medium high heat.
- Place a tortilla in the skilled and flip with spatula a couple of times, letting it sit in the pan heating up until air pockets start to form and the tortilla puffs up.
- Place cheese on half of the tortilla, a couple of centimetres from the edge.
- Add chicken pieces on top of the cheese then fold tortilla like an omelette.
- Press down on folded tortilla with spatula and lower the heat to medium.
- When cheese has melted, remove to cutting board.
- Open the tortilla wide (careful about the heat) and layer on apple and salsa.
- Fold tortilla back and cut into triangles.
- Repeat process with remaining ingredients and tortillas.
