Banana nut muffins
These sweet, easy banana nut muffins are perfect as a snack or breakfast on the go.
Makes: 12
Ingredients:
- 4 bananas, over-ripened
- 2 cups of self-raising flour
- 1 cup of brown sugar
- ¾ up of butter, melted
- 2 eggs
- 1 teaspoon of vanilla extract
- ½ cup of chopped pecans
Method:
1. Preheat oven to 190°C and grease or line a muffin tin.
2. In a bowl, mash two bananas. Set aside.
3. In a separate bowl, mix remaining bananas and sugar together.
4. Add melted butter, eggs and vanilla and mix.
5. Add flour and mix together. Add nuts and separate bananas and fold in.
6. Pour batter into muffin tins, filling each halfway. Set by tapping tin against counter to relieve any air bubbles.
7. Bake for 18 to 20 minutes or until cooked through. Let cool.
