Banana oatmeal cups

If you’re looking for a tasty on-the-go snack option, then you can’t go past these quick and healthy banana oatmeal cups.

Ingredients:

Method:

  1. Preheat your oven to 180°C. Line the muffin tin.
  2. In a bowl mix together the oats, spices, salt, baking powder, and walnuts. In a medium bowl, blend together the bananas, applesauce, eggs, maple, and vanilla until it is smooth.
  3. Combine banana mixture with oat mixture, making sure not to over-mix. Evenly scoop into the muffin tin.
  4. Bake for approximately 12 minutes or until golden and crunchy.
