Banana oatmeal cups
If you’re looking for a tasty on-the-go snack option, then you can’t go past these quick and healthy banana oatmeal cups.
Ingredients:
- 4 cups instant oats, or regular oats blended into smaller pieces.
- 1 tablespoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ cup walnuts, broken up
- 3 very ripe average sized bananas, peeled
- ½ cup apple sauce
- 2 eggs
- ¼ cup maple syrup
- 1 tablespoon vanilla extract
Method:
- Preheat your oven to 180°C. Line the muffin tin.
- In a bowl mix together the oats, spices, salt, baking powder, and walnuts. In a medium bowl, blend together the bananas, applesauce, eggs, maple, and vanilla until it is smooth.
- Combine banana mixture with oat mixture, making sure not to over-mix. Evenly scoop into the muffin tin.
- Bake for approximately 12 minutes or until golden and crunchy.
