Broccoli and cheddar millet bake
Packed with nutritious ingredients, this broccoli and cheddar millet bake is a dish you can enjoy guilt-free.
Serves: 4
Ingredients:
- 8 cups broccoli florets (around 4 small heads)
- 1½ tablespoons olive oil
- 1½ cups millet
- 3 cloves garlic, diced
- 1 tablespoon butter
- 1 cup milk
- 1 teaspoon dried thyme
- 200g shredded cheddar cheese, plus extra to garnish
- Salt and pepper
- 4 medium ovenproof dishes
Method:
- Preheat oven to 230°C.
- In a bowl, combine broccoli with 1½ tablespoons olive oil and pinch of salt and pepper. Place on a lined tray and roast for 20 minutes.
- Meanwhile, prepare the millet according to the packet instructions.
- Heat butter in large frying pan over medium heat. Add garlic and cook for 1 minute. Add milk, 1 teaspoon of salt and thyme. Bring to simmer. Stir in cheese and cook until cheese melts and sauce thickens.
- When broccoli, millet and sauce are finished, divide equally into four dishes. Stir to combined ingredients and top off with a sprinkle of cheese.
- Turn down oven temperature to 200°C. Bake for 15 minutes or until tops are cooked and golden. Serve.
