Creamed spinach
Simple and delicious, this creamy spinach side dish will nicely compliment any roast.
Ingredients:
- 25g butter
- 1 brown onion, finely chopped
- 2 tablespoon flour
- 100ml milk
- 100ml thickened cream
- 2 large bunches spinach, trimmed, chopped
- Salt and pepper to season
- Pinch of ground nutmeg
Method:
- Heat butter in saucepan over medium to high heat. Add onion and cook until softened. Add flour and stir for two minutes. Gradually stir in milk and gently simmer for five minutes or until sauce has thickened.
- Add spinach, cooking for two to three minutes or until spinach starts to wilt
- Stir in cream, simmering, then sprinkle with nutmeg. Season with salt and pepper. Serve.
