Gluten-free crumpets

This tasty alternative to traditional recipes produces crumpets that are hot, buttery and most-importantly, gluten-free! Try these tasty crumpets today.

Makes: 10 crumpets

Ingredients:

Method:

  1. Whisk flour, yeast, sugar, milk and 3/4 cup warm water in a bowl until smooth.
  2. Cover with plastic wrap.
  3. Leave to prove in a warm place for one hour 30 minutes or until light and foamy.
  4. Place two teaspoons oil in a large non-stick frying pan.
  5. Brush egg rings with oil. Place in pan.
  6. Heat over medium heat until hot.
  7. Spoon 1/4 cup batter into each ring. Cook for seven minutes or until golden brown.
  8. Turn crumpets over and remove rings.
  9. Cook for a further two to three minutes until golden and cooked. Transfer to a plate.
  10. Repeat with remaining batter, brushing rings with oil between each batch.
  11. Serve crumpets with butter and jam.
