Healthy banana and walnut muffins
Fact: everyone likes muffins. Fact: they’re not the healthiest snack. Until now. You won’t be able to get enough of these treats packed with wholesome goodness.
Ingredients:
- 4 ripe bananas
- 1 cup packed light-brown sugar
- ½ cup walnut oil
- 1 large egg
- 1 cup plain flour
- 1 cup wholemeal flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon coarse salt
- ½ cup non-fat yogurt
- 1 tablespoon pure vanilla extract
- 1 cup chopped toasted walnuts
