Lemon blueberry muffins

These delicious lemon blueberry muffins are soft, spongy and so easy to make!

Serves: 12

Ingredients:

Method:

  1. Preheat oven to 180-200 degrees Celsius and grease a 12-cup muffin tin.
  2. In a large bowl combine flour, sugar, baking powder and salt. Stir in walnuts and lemon peel.
  3. In a small bowl beat egg, milk, butter and vanilla.
  4. Pour egg mixture into dry ingredients and stir just until the flour is moistened- the batter will be lumpy. Fold in blueberries carefully to avoid squashing them.
  5. Spoon into muffin cups and bake 20 to 22 minutes or until tops are golden.
