Potato and bacon cakes
For an easy, filling breakfast or snack option, try these hearty, delicious bacon potato pancakes.
Serves: 4
Ingredients:
- 2 cups of mashed potatoes
- 8 to 10 slices of diced, fried bacon
- 1 onion, diced
- ½ a teaspoon of black pepper
- ½ a teaspoon of salt
- ½ a cup of vegetable oil
- 1 egg
Method:
- Mix all ingredients except vegetable oil into a batter.
- Heat vegetable oil over medium heat in a skillet.
- Place 10cm disks of batter into the oil once hot.
- Cook disks for around five minutes for each side, or until golden brown.
- Remove with slotted utensil and place on a paper towel to remove excess oil.
- Repeat until all batter is used.
