Potato and onion tortilla
This Spanish-inspired potato and onion tortilla is easy to make and even easier to eat. Serve with a simple salad for a quick and tasty meal.
Ingredients:
- ¼ cup olive oil
- 1 brown onion, thinly sliced
- 4 garlic cloves, crushed
- 600g potatoes, peeled and thinly sliced
- 8 eggs
- Salt and pepper, to season
Method:
- Heat 1 tablespoon oil in a large frying pan over medium-high heat. Add onion and garlic. Cook for 8 minutes or until onions are softened. Transfer to bowl.
- Heat remaining oil in pan and add potatoes. Cook, stirring, for 25 minutes or until golden and tender. Add in onion mixture.
- Preheat grill on high. Whisk eggs in bowl. Season with salt and pepper.
- Pour whisked eggs into pan with potatoes. Shake to evenly distribute ingredients, ensuring eggs combine with potato. Cook over medium-high heat for 5 minutes or until bottom of tortilla is set.
- Place tortilla under grill and cook for 5 to 10 minutes or until golden and cooked through. Cut into wedges and serve.
