Roasted garlic, pumpkin and sweet potato mash

For some sweetness to your side dish, you can’t go past this pumpkin and sweet potato mash.

Ingredients:

Method:

1. Preheat oven to 180°C.

2. Arrange pumpkin and sweet potato pieces in roasting pan. Cut head off garlic add to pan. Toss with olive oil.

3. Roast for 45 minutes or until vegetables are tender. Squeeze out garlic. Mash everything together.

4. Season with salt and pepper. Serve.
