Spicy prawn fried rice
Simple, easy, effective and full of taste, if you’re feeding the troops you can’t do better than a serving of delicious, flavoursome, fried rice. Follow this simple recipe for fried rice with a spicy touch.
Ingredients:
- 1 ½ cups jasmine rice
- 2 tablespoons sambal oelek
- 350g medium peeled green prawns
- 2 tablespoons peanut oil
- 3 green onions
- ½ cup peas
- ½ cup corn kernels
- 2 bacon rashers
Method:
- Cook rice in a large saucepan of boiling water for 12 minutes.
- Drain water and spread on a tray. Refrigerator for two hours or until cold.
- Place sambal oelek into a medium bowl. Coat prawns, then set aside for 10 minutes.
- Heat wok over high heat and cook (then chop) bacon rashes.
- Add peanut oil, then add prawns and sambal oelek mix and stir fry for two – three minutes.
- Add onions (thinly sliced) and stir fry for about a minute.
- Add rice, bacon peas and corn kernels and stir-Sfry for two minutes.
- Toss to combine, then serve.
