Spinach and egg grain bowl
Are you running out of healthy breakfast ideas? Why not skip the toast and get creative with this recipe for a spinach and egg grain bowl?
Serves: 2
Ingredients:
- 250g cooked farro (125g uncooked)
- 2–3 tablespoons Dijon Dressing
- 125g wilted spinach
- 150g mushrooms, halved and roasted
- 2 medium poached eggs
- sea salt and freshly ground black pepper
Dijon dressing (Makes 150 ml)
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 125ml olive oil
- sea salt and freshly ground black pepper
Method:
- To make the spinach and egg, toss the farro with 1 tablespoon of the dressing. Divide the farro, wilted spinach and mushrooms evenly between 2 bowls. Top each bowl with a poached egg and the remaining dressing. Season.
- To make the dressing,whisk the honey, mustard and lemon juice together in a bowl until smooth. While whisking, slowly add the oil until the dressing comes together. Season to taste.
