Spinach and egg grain bowl

Are you running out of healthy breakfast ideas? Why not skip the toast and get creative with this recipe for a spinach and egg grain bowl?

Serves: 2

Ingredients:

Dijon dressing (Makes 150 ml)

Method:

  1. To make the spinach and egg, toss the farro with 1 tablespoon of the dressing. Divide the farro, wilted spinach and mushrooms evenly between 2 bowls. Top each bowl with a poached egg and the remaining dressing. Season.
  2. To make the dressing,whisk the honey, mustard and lemon juice together in a bowl until smooth. While whisking, slowly add the oil until the dressing comes together. Season to taste.
