Strawberry star biscuits
If you’re on the lookout for a delicious baking project with your grandchildren this Christmas you can’t do better than these delicious, strawberry star biscuits. Just don’t eat them all yourself!
Makes: 22 biscuits
Ingredients:
- 185g butter, softened
- ¾ cup caster sugar
- 1 teaspoon vanilla extract
- 1 egg
- 2 cups plain flour
- ½ cup strawberry jam
Method:
- Preheat your oven to 180°C.
- Prepare three baking trays by lining with baking paper.
- Using an electric mixer, beat butter, sugar and vanilla together until pale and creamy.
- Add egg to the mixture and beat until combined.
- Sift flour over the butter mixture and using a wooden spoon, stir to combine.
- Roll your biscuit dough out between tow sheets over baking paper until 4mm thick.
- Using a 7cm star-shaped cutter, cut stars from the dough.
- Place your stars on the tray, re-roll remaining dough and repeat. Refrigerate until firm.
- Using a 3.5cm star-shaped cutter, cut small stars from centre of half the stars.
- Bake for 10 minutes or until light golden.
- Stand on trays for five minutes then transfer onto a wire rack to cool.
- Spread large stars with jam, then sandwich with cut-out stars.
