Thai-style pork curry
This Thai-inspired creamy curry is perfect for those nights you want a dish bursting with flavour. But don’t worry if you’re not a fan of chilli though, yellow curry is mild and not too spicy, making it suitable for all palates.
Serves: 4
Ingredients:
- 2 tablespoons vegetable oil
- 2 spring onion, thinly sliced
- 1 garlic clove, minced
- 2 tablespoon yellow curry paste
- 400g pork loin, cubed
- 1 cup pork or chicken stock
- 400ml can coconut milk
- 2 teaspoons brown sugar
- 2 tablespoon soy sauce
- 1 teaspoon fish sauce
- Fresh coriander, to garnish
Method:
1. Heat oil in large frying pan over high heat. Add spring onions and garlic and cook for 1 minutes. Add curry paste and fry for 1 to 2 minutes or until aromatic.
2. Add pork and cook for 2 minutes or until coated in curry mixture. Pour in stock, coconut milk, fish sauce, soy sauce and brown sugar. Bring to boil and then reduce heat to simmer for 10 to 15 minutes, or until sauce thickens. Garnish with coriander and serve with rice.
