Tomato and chicken cheesy pasta bake
Cheesy, flavourful and supremely satisfying, let this be your new go-to pasta bake.
Ingredients:
- 2 tablespoons of olive oil
- 1 onion, chopped finely
- 2 crushed garlic cloves
- 400g of chicken breast, cut into pieces
- 400g can of chopped tomatoes
- 2 tablespoons of sun-dried tomato paste
- 1/8 teaspoon of sugar
- Salt and pepper
- 400g of spiral pasta
- 2 green chilli peppers, chopped finely.
- 100g of shredded mozzarella cheese
- 50g of shredded parmesan cheese
Method:
1. In a frying pan, heat olive oil. Fry up onion and garlic until it begins to soften.
2. Add chicken to pan and fry until chicken is browned.
3. Add tomatoes, tomato paste and sugar and salt and pepper to taste. Let simmer for 15 minutes, stirring occasionally.
4. Boil pasta in salted water until cooked al dente and preheat the oven to 220°C.
5. Drain pasta and add to chicken, stirring. Pour into a casserole dish and top with chilli peppers and cheeses.
6. Bake for 15 to 20 minutes or until cheese becomes golden.
