White chocolate macadamia and raspberry muffins
White chocolate, macadamia, and raspberry? That’s a combination we won’t even try to resist.
Makes: 6
Ingredients:
- ½ cup of white chocolate chips
- ¾ cup of caster sugar
- 2 cups of self-raising flour
- ½ cup of macadamias, chopped
- 1 cup of raspberries, frozen, chopped
- 1 egg
- ½ cup of macadamia oil
- ¾ cup of buttermilk
Method:
1. Preheat oven to 200°C and line muffin pans with cupcake liners.
2. In a bowl, add white chocolate, sugar, flour, macadamias and raspberries. Stir until combined and create a well in the middle.
3. In another bowl, whisk egg, oil and buttermilk together and pour into flour mixture.
4. Mix together and pour batter into muffin pans.
5. Bake for 20 minutes or until cooked through.
