Apricots stuffed with cottage cheese and hazelnuts

When you have apricots as sweet and delicious as we do, all you need is a few extra ingredients to make tasty yet healthy appetisers that will have pride of place at any party table.

Makes: 24

Ingredients:

  • 12 apricots
  • 200g cottage cheese
  • 1/4 cup finely chopped hazelnuts

 Method:

1. Cut the apricots in half and remove the pits. Spoon cottage cheese into centre of apricot. Sprinkle with hazelnuts. Serve.
