Thai beef grain bowl

Grain bowls don’t have to be rabbit food. Liven up your rice and veg with this warming, Thai-style beef flavour.

Serves: 2

  • 125 g dark soy sauce
  • 3 tablespoons olive oil
  • 3 red chillies, thinly sliced
  • 1 garlic clove, grated
  • 2 teaspoons fresh ginger, grated
  • 1 teaspoon sesame oil
  • 250 g cooked black rice (100g uncooked)
  • 200 g flank steak, cooked and sliced
  • 50 g cucumber, sliced
  • 50 g baby romaine lettuce
  • Sea salt and freshly ground black pepper

Method:

  1. To make the soy dressing, whisk all of the ingredients together in a bowl until well combined.
  2. Toss the rice, steak, cucumber and lettuce in a large bowl with the dressing.
  3. Divide evenly between 2 bowls and season.
