Thai beef grain bowl

Grain bowls don’t have to be rabbit food. Liven up your rice and veg with this warming, Thai-style beef flavour.
Serves: 2
- 125 g dark soy sauce
- 3 tablespoons olive oil
- 3 red chillies, thinly sliced
- 1 garlic clove, grated
- 2 teaspoons fresh ginger, grated
- 1 teaspoon sesame oil
- 250 g cooked black rice (100g uncooked)
- 200 g flank steak, cooked and sliced
- 50 g cucumber, sliced
- 50 g baby romaine lettuce
- Sea salt and freshly ground black pepper
Method:
- To make the soy dressing, whisk all of the ingredients together in a bowl until well combined.
- Toss the rice, steak, cucumber and lettuce in a large bowl with the dressing.
- Divide evenly between 2 bowls and season.
