Tomato, basil and mozzarella salad

If you’re looking for a light summer salad that’s full of flavour, look no further than this recipe for a tomato and mozzarella salad that’s going to have everybody at the barbeque asking for seconds.

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon aged balsamic vinegar
  • 4 large ripe tomatoes, thinly sliced
  • 4 fresh mozzarella balls, thickly sliced
  • 1 red onion, very thinly sliced
  • 1/2 cup fresh basil leaves

Method:

  1. Prepare the ingredients for your salad by cutting the tomatoes into thin slices, mozzarella balls into thick slices and the red onion into very thin slices.
  2. Place oil and balsamic vinegar into a small jug and whisk until well combined.
  3. Arrange tomato, mozzarella, onion and basil on a serving platter.
  4. Drizzle with balsamic dressing and serve.
