"Shattered hearts": Culinary world mourns tragic death of Jock Zonfrillo

<p>Jock Zonfrillo, celebrity chef and host of <em>Masterchef Australia</em>, has passed away at 46. </p> <p>The entertainment and culinary industries are in mourning - and the fate of the hit cooking competition in question - as friends, family, and fans try to come to terms with their tragic loss. </p> <p>The news was broken - and confirmed - with a statement from Zonfrillo’s family, who wrote of their devastation and “shattered hearts” as they faced life without him. </p> <p>"With completely shattered hearts and without knowing how we can possibly move through life without him, we are devastated to share that Jock passed away yesterday," they wrote.</p> <p>"So many words can describe him, so many stories can be told, but at this time we're too overwhelmed to put them into words.</p> <p>"For those who crossed his path, became his mate, or were lucky enough to be his family, keep this proud Scot in your hearts when you have your next whisky.</p> <p>"We implore you to please let us grieve privately as we find a way to navigate through this and find space on the other side to celebrate our irreplaceable husband, father, brother, son and friend."</p> <p>Zonfrillo’s body was reportedly discovered by police after they were called to a Carlton address at around 2am for a welfare check.</p> <p>It has been said that Zonfrillo had flown home early from a trip to Europe with his wife, Lauren, and their two young children - two-year-old Isla and five-year-old Alfie - ahead of the season 15<em> Masterchef Australia </em>launch. </p> <p>Production on the series had wrapped a month prior, and while it was set to premiere on May 1, it was delayed out of respect for their late host. </p> <p>Zonfrillo’s co-star and fellow celebrity chef Jamie Oliver was one of the first to take to social media to share his grief with supporters, posting a picture of the smiling <em>Masterchef</em> judging panel alongside the caption, “I’m in total shock to wake up to the sudden death of chef Jock Zonfrillo. </p> <p>“We had the best time working together for this year’s master chef, I can’t tell how good it was to work with him! Matt Preston posts "one of the finest hacks on TikTok"

<p dir="ltr">Former<span> </span><em>Masterchef<span> </span></em>judge and food critic Matt Preston has joined TikTok, and it seems people are divided on whether his presence on the platform is a good thing, or whether it’s a sign he’s “fallen from grace”.</p> <p dir="ltr">After sharing a tutorial on how to make sweet chilli instant ramen, which he calls “one of the finest hacks on TikTok”, Preston received numerous positive comments, with one commenter saying “tonight’s dinner plans have changed. Several comments referenced his former role as judge on the ever-popular cooking show, with one writing, “The bloke’s really fallen from grace”, while another said, “The new judges are better than you and co ever were”.</p> <p dir="ltr">Others wrote, “From a MasterChef judge to two-minute noodles chef, big drop”, and “That’s not good food”, while others rushed to defend him. “He could certainly find ways of building this TikTok, but wouldn’t say he’s fallen from grace just because he’s not viral. He’s a nice guy with good food,” one supporter said.</p> <p dir="ltr">Several asked him to write down the recipe as they couldn’t follow the fast-paced video, with one person commenting, “I respect this man for bringing his cooking to TikTok, looks amazing and I’m going to make it.” Several people commented on his appearance, with one person writing, “I don’t know what he cooked, I was too busy looking at his handsome face. What a man!” while another wrote, “Your hair, sir. It is magnificent. Gordon Ramsay's daughter slams radio host for weight comments

<p>Image: Instagram</p> <p>Gordon Ramsay’s teenage daughter has slammed a British radio host for mocking her as a “chubby little thing” and insinuating that she’s eaten too much of her celebrity chef “dad’s cooking”.</p> <p>Tilly Ramsay, who is currently a contestant on<span> </span><em>Australia’s Celebrity MasterChef</em>, and the UK’s<span> </span><em>Strictly Dancing,</em><span> </span>hit back at 67-year-old<span> </span><em>LBC<span> </span></em>host Steve Allen in a lengthy Instagram message, writing “that words can hurt and at the end of the day I am only 19.”</p> <p>“She’s a chubby little thing, isn’t she? Have you noticed?” Allen said while discussing Ramsay’s turn on<span> </span><em>Strictly Dancing.</em></p> <p>“Probably her dad’s cooking, I should Image. EXCLUSIVE: Masterchef’s Sarah Todd shares impact of her mum’s breast cancer diagnosis

At least once a week, you will find a fish curry simmering away in my kitchen. I will be sharing this recipe with the 3 Course Challenge participants. MasterChef judge Andy Allen shares secret to “restaurant quality” scrambled eggs

<p>MasterChef Australia judge Andy Allen has shared his cooking tricks to make the perfect “restaurant-quality” scrambled eggs in just 10 seconds.</p> <p>The co-owner of Three Blue Ducks said that how he makes scrambled eggs for breakfast is one of the most common questions he gets asked.</p> <p>You only need three simple ingredients, which are eggs, salt and oil.</p> <p>“We call them ‘the 10 second eggs’,” Andy said in a 'how-to' MasterChef video.</p> <p>To make one serve of fluffy scrambled eggs, he whisked two eggs in a bowl and seasoned them with a pinch of salt after the eggs have a “smooth” consistency.</p> <p>“Here's the trick, we want a nice hot pan,” Andy explained.</p> <p>“I'm using grape seed oil, which has got a high smoke point. You can also use rice bran or vegetable oil,” Andy said.</p> <p>“We want to stay away from olive oil for this [dish] because we put the eggs in just before our oil starts to smoke.”</p> <p>Andy then poured the mixture into the pan over high heat, and as the curds started to form, he expertly used a silicone spatula to move the eggs around.</p> <p>“Have your spatula ready because this only takes 10 seconds,” he said.</p> <p><img style="width: 0px; height: 0px;" src="https://oversixtydev.blob.core.windows.net/media/7836330/egg-hack-body.jpg" alt="" data-udi="umb://media/3f69df1d451e4e90a99cfc2bc0082abc" /></p> <div class="body_text "> <p>“Eggs in to a nice hot pan... you can see that they're just starting to cook around the outside, and in one kind of big smooth motion, we're just moving the eggs.”</p> <p>After 10 seconds, Andy said you should see the eggs are “just set”.</p> <p>“We take them out [of the pan],” he said.</p> <p>“There it is, 10 second eggs, no excuses. MasterChef contestant kicked out after serving dead bird to the judges

"We were worried": MasterChef’s Gary Mehigan’s stark admission about George Calombaris

Nigella Lawson: "How my daughter taught me to be happy again"

<p>Nigella Lawson is known by many as being a domestic goddess in the kitchen, but she credits her daughter for helping her transform her life after her ex-husband grabbed her by the throat.</p> <p>Charles Saatchi, advertising millionaire, shocked the world as he grabbed his then wife by the throat in public in a busy restaurant. Just seven weeks after the incident back in 2013, their 10-year marriage was over.</p> <p><img style="width: 500px; height: 281.25px;" src="https://oversixtydev.blob.core.windows.net/media/7828843/nigella-lawson.jpg" alt="" data-udi="umb://media/8b57f00d49ae48ceab13b0a2e626367d" /></p> <p>However, Nigella’s confidence was shaken, and she developed a fear of being photographed or being seen in public.</p> <p>Her daughter, Cosima Diamond, 25, is credited with helping Nigella overcome her fear.</p> <p>“I have been forced to be guarded. Meet the 64-year-old winner of Swiss alpine MasterChef

<p>New Zealand travel writer Justine Tyerman meets Iris Riatsch, the winner of Landfrauenküche, the Swiss alpine version of MasterChef, who shares the recipe for her famous nut tart.</p> <p>High in the lush green meadows of the beautiful Engadine, I met a famous chef and television star. I was visiting an organic farm in Vnà, a tiny alpine village of 50 people near the town of Scuol in the Swiss canton of Graubünden.</p> <p>The farmer, Fadri Riatsch, showed us around his impressive farming operation, where his cows and pigs are treated like royalty, after which we sampled a delicious array of richly flavoursome alpine cheese and salami made from his cows’ milk and meat, and locally-brewed beer.</p> <p style="text-align: center;"><img width="500" height="333" src="https://oversixtydev.blob.core.windows.net/media/7264900/image-3_500x333.jpg" alt="Image 3 (1)"/></p> <p style="text-align: center;" align="center"><em>Vnà is a tiny alpine village near Scuol in the Lower Engadine in the Swiss canton of Graubünden. Iris just happened to be the winner of the Swiss Rural Woman of the Decade, a hugely popular MasterChef-type television show featuring country women and their recipes.</p> <p>Iris was a delightful, modest lady of 64 who radiated warmth and good health. Image credit: Justine Tyerman</em></p> <p>Ten episodes of the show were filmed in her own kitchen in Vnà so she has become accustomed to working under pressure in front of television cameras.</p> <p>Originally from Zurich, Iris has lived at Vnà for 40 years and has a very close bond with the land. She keeps a large organic garden and attributes her success in the competition to the relationship she has with all the ingredients she uses in her recipes.</p> <p>“It’s very important for me to know where the food and flavours come from — I grow all the vegetables and herbs I use in my recipes here in my own garden,” she says standing amid huge cabbages, potatoes, leeks, peas, brussel sprouts, carrots, spinach, artichokes and herbs.</p> <p>The meat and dairy products she uses come from Fadri’s farm and the venison from her husband Domenic’s hunting expeditions.</p> <p>Iris loves to cook but keeping the Engadine recipes alive is the main motivation for entering the competition. Many are traditional recipes she learned from her mother-in-law.</p> <p>Her winning entry was a venison schnitzel dish with juniper berry sauce followed by a nut tart which has become quite famous.</p> <p>Switzerland’s second biggest supermarket chain is promoting Iris’s recipes and her nut tart is marketed under her own name as ‘Iris Engadinerli’.</p> <p style="text-align: center;"><img width="498" height="280" src="https://oversixtydev.blob.core.windows.net/media/7264902/image-4_498x280.jpg" alt="Image 4"/></p> <p align="center"><em>The main course in Iris's winning entry was a venison schnitzel dish with juniper berry sauce. Image credit: Justine Tyerman</em></p> <p>Michelin-star chefs are now lining up to learn from her.</p> <p>Mother of four and grandmother of nine, Iris leads a busy life.</p> <p>She runs cooking classes for children and teenagers so that she can pass on the Engadine recipes to the next generation.</p> <p>Like most Swiss, Iris likes hiking so she combines two of her loves in one, cooking for hikers in one of the local alpine huts.</p> <p>She rents out a small holiday flat under her house, a former cheese factory, to travellers who want to get back to nature and experience a week helping out on an organic farm.</p> <p>And she’s an accomplished artist with a studio at her house. Image credit: Justine Tyerman.</em></p> <p><strong>‘Iris Engadinerli’</strong></p> <p><strong><span style="text-decoration: underline;">Ingredients</span>:</strong></p> <p><em>For the Engadinerli:</em></p> <ul> <li>150g butter</li> <li>150g sugar</li> <li>1 egg</li> <li>1 pinch of salt</li> <li>300g flour</li> </ul> <p><em>For the filling:</em></p> <ul> <li>300g sugar</li> <li>1 tablespoons water</li> <li>20mls cream</li> <li>250g of walnuts</li> <li>2 tablespoons grated almonds</li> <li>1 tablespoons honey</li> </ul> <p><em>For the berry compote:</em></p> <ul> <li>2 tablespoons liquid honey</li> <li>2 tablespoons orange juice</li> <li>1 vanilla pod</li> <li>400g fresh berries</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <p><em>For the Engadinerli:</em></p> <ol> <li>Preheat the oven to 180 °C. Cover a flat baking tray with baking paper.</li> <li>Cream the butter and sugar, beat in the egg and mix with the flour and a pinch of salt. Put the dough in a cool place for at least one hour. Form into a thin rectangular shape on the baking sheet, no more than 1cm thick.</li> <li>For the filling, melt the sugar over a gentle heat, stir in a tablespoon of water. Remove the pan from the heat. Carefully add cream, nuts and honey and stir until smooth. Let cool down.</li> <li>Spread the filling on the pastry and bake in a preheated oven for 30 minutes at 180 degrees. The tart should be baked nice and light brown. Cut into rectangles when it is still warm.</li> </ol> <p><em>For the berry compote:</em></p> <p>5. For the berries, mix honey, orange juice and vanilla in a bowl. Carefully mix together with the berries. Cover and allow to rest for 30 minutes. Then warm gently in a pan carefully. Do not boil. 5 cooking shows to inspire the chef in you

<p>Feeling sick of your regular weekly dinner routine? Shake things up with some fresh inspiration from the most celebrated chefs around. We round up five of the best cooking shows that can turn anyone – yes, anyone! – into a top cuisinier.</p> <p><strong><em>The Great British Bake Off</em></strong></p> <p>If you’re not already aware of this hit UK phenomenon, it’s not too late to catch up. As much as we love the Australian version with Maggie Beer, there’s just no beating the original. If you’ve never watched it before, think <em>MasterChef</em>, but just mouth-watering desserts. It’s the most quintessentially British TV show you could imagine.</p> <p><strong><em>The French Chef</em></strong></p> <p>Who remembers this iconic series hosted by legendary chef Julia Child? On air from 1963 to 1973, it’s the show that shot the American food guru to fame, featuring (almost) every classic French recipe you can think of, from beef bourguignon (the very first episode) and coq au vin to soufflé and croissants.</p> <p><strong><em>Anthony Bourdain: Parts Unknown</em></strong></p> <p>Now, you might not have heard of this one, but the American chef’s CNN show (which you can catch on Netflix) is more than your average food series. Bourdain mixes his love of travel with all things culinary as he travels the world off the beaten track. The four-time Emmy-winning series also earned a coveted Peabody Award in 2013. Definitely worth a watch.</p> <p><strong><em>MasterChef Australia</em></strong></p> <p>We couldn’t leave Australia’s favourite cooking show off our list, could we? Showcasing the best home cooks around the country, <em>MasterChef</em> proves you don’t need formal training to become… well, a master chef. Each season leaves us glued to our screens for the simple reason that the contestants are just regular people like you and me. Very inspiring.</p> <p><strong><em>Heston’s Feasts</em></strong></p> <p>Heston Blumenthal’s wacky and experimental creations mightn’t be easily recreated in the kitchen at home, but they’re certainly inspirational. In each episode of <em>Heston’s Feasts</em>, the Michelin-star chef presents a different themed “feasts”, serving up food inspired by different eras of history (like the Romans and The Tuodors) as well as some fictional sources (like <em>Willy Wonka</em> and <em>Alice in Wonderland</em>).</p> <p>What’s your favourite cooking show? Marco Pierre White’s perfect risotto and arancini

<p>"People just rush things," says Marco Pierre White, talking of course, about those times in the kitchen when we get impatient with risotto. "You don't have to ladle in the stock one by one, but you do need to give things time to settle. For example, you shouldn't immediately stir through the butter, you need to put it on and give it a minute to rest. A good risotto comes at the end of a number of steps done well." </p> <p>He tackled the risotto issue head on in MasterChef Australia, because of the TV show's famous curse – that of the sloppy risotto which seems to send every contestant who cooks it straight home. </p> <p>And while it seems there are no shortcuts to a great risotto, Pierre White does have trade tricks. </p> <p>"If you can't cut an onion fine enough, use a grater and grate it," he says in that purposeful voice. "You don't want chunks of onion through the risotto. I do the same when I'm cooking bolognese at home, I'll grate the onion, carrot and celery. Also, we've been taught to use a wooden spoon to stir, when actually a spatula is much better for this dish." <br /> <br /> Here is his foolproof risotto recipe, with enough left over to make everyone's favourite arancini balls. </p> <p><strong><span style="text-decoration: underline;">Risotto</span></strong></p> <p><strong><span style="text-decoration: underline;">Serves:</span></strong> 4 (plus leftovers for arancini, recipe below)</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <p><em>For the white beef stock</em></p> <ul> <li>500g beef bones, cut small</li> <li>5L water</li> <li>1 bay leaf</li> </ul> <p><em>For the risotto</em></p> <ul> <li>1.6L white beef stock</li> <li>1g saffron</li> <li>135g unsalted butter</li> <li>2 tbsp. olive oil</li> <li>1 onion, grated</li> <li>1 garlic clove, crushed</li> <li>400g superfine rice</li> <li>125ml dry white wine</li> <li>40g parmesan cheese, finely grated, plus extra to garnish</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>For the white beef stock, place all ingredients into a large, heavy-based pot over low heat and cover with a lid. Simmer for three hours.</li> <li>Remove from heat and strain stock liquid through a fine sieve lined with muslin cloth into a clean bowl. Allow liquid to cool, then skim surface with a ladle to remove any fat.</li> <li>For the risotto, place 1.6 litres of the white beef stock into a large, heavy based saucepan and bring to the boil. Reduce heat to a simmer, add saffron and cover with a lid to infuse for five minutes.</li> <li>Place a medium-sized, heavy-based saucepan over low heat. Add one tablespoon of the unsalted butter and olive oil. Add onion and garlic and cook, without browning, until soft.</li> <li>Add the rice and stir until all grains are coated with oil and have slightly warmed.</li> <li>Deglaze the saucepan with white wine then stir continuously until all liquid has been absorbed.</li> <li>Add in half of the white beef stock to the rice saucepan and stir continuously to prevent rice sticking to the base of the pan. When the liquid has reduced, add another quarter of the stock.  When all liquid has been absorbed add remaining stock. Serve with a sprinkle of grated parmesan.</p> <p><strong><span style="text-decoration: underline;">Arancini</span></strong></p> <p><strong><span style="text-decoration: underline;">Makes</span>:</strong> 10</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>350g leftover risotto, cold</li> </ul> <p><em>Crumb mix</em></p> <ul> <li>35g plain flour</li> <li>Salt and pepper, to season</li> <li>2 eggs, lightly beaten</li> <li>100g panko breadcrumbs</li> <li>1.5L vegetable or canola oil, for deep-frying</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li><strong>Fo</strong>r the arancini filling, line a baking tray with baking paper. </li> <li>Divide cold risotto mixture into 10 even portions and roll into balls. Place balls onto lined tray and set aside in the fridge for 20 minutes to firm up.</li> <li>Meanwhile, prepare the crumb mix by placing flour into a medium sized mixing bowl. Season with salt and pepper and set aside.</li> <li>Place lightly beaten eggs in a medium sized bowl and set aside next to the flour mix.</li> <li>Place panko crumbs into a food processor and blitz to a fine crumb, transfer to a medium sized bowl and set aside next to the flour and egg bowls.</li> <li>Remove risotto balls from the fridge. Carefully roll balls in flour, ensuring they are evenly coated. Shake off excess flour and then dip into egg, allow excess egg to drip off then dip into crumbs and coat evenly.</li> <li>Once all balls are crumbed, dip balls into the egg, a second time, then coat with a second layer of crumb. Gently roll each ball between your palms to ensure crumbs are firmly pressed. Return crumbed balls to a tray lined with baking paper and place back into the fridge for 20 minutes to set.</li> <li>Heat frying oil in a medium saucepan to 180°C.</li> <li>Fry arancini in batches, until golden brown, about three to four minutes. </li> <li>Remove arancini from oil and place onto a tray lined with paper towel to drain.
