Potato and goat's cheese croquettes

<p>As a Moorish starter or even just a nice afternoon snack for special occasions, you really can’t go past these tasty potato and goat’s cheese croquettes.</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>500g potatoes, peeled and chopped</li> <li>50g unsalted butter, chopped</li> <li>1 egg, lightly beaten, plus extra 1 yolk</li> <li>100g soft goat's cheese</li> <li>75g plain flour</li> <li>120g flaked almonds, crushed</li> <li>Sunflower oil</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>To begin, cook potato in a pan of boiling, salted water for 20 minutes or until tender.</li> <li>Drain then return to the pan and shake to remove excess moisture.</li> <li>Mash potato with butter until smooth, then season.</li> <li>Add egg yolk and goat’s cheese and mix.</li> <li>Divide mixture into four portions, rolling into a thick log. Cut logs into pieces.</li> <li>Place flour, beaten egg and almond in separate bowls.</li> <li>Roll the croquettes first in flour, then egg, then almond.</li> <li>Half fill a deep-fryer or large pan with sunflower oil and heat to 190°C.</li> <li>Fry for three minutes or until golden, and drain on paper towel.</li> </ol> <p>Don’t you just love croquettes! Chorizo croquettes

<p>If you’re entertaining for a group of guests or just want to try something a little different for the family, these chorizo croquettes are a tasty option!</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>1 (about 120g) chorizo, finely chopped</li> <li>100g butter</li> <li>⅔ cup plain flour</li> <li>1 ½ cups milk</li> <li>2 tablespoons chopped fresh continental parsley</li> <li>¼ cup plain flour, extra</li> <li>2 eggs, lightly whisked</li> <li>2 ¼ cups fresh breadcrumbs</li> <li>Light olive oil, to deep-fry</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Cook the chorizo in a non-stick frying pan over high heat, stirring occasionally, for 3 minutes or until crisp. Transfer to a plate lined with paper towel.</li> <li>Melt the butter in a medium saucepan over medium-high heat until foaming. Stir in the flour for 1 minute. Remove from heat. Stir in one-third of the milk.</li> <li>Gradually stir in remaining milk until the mixture thickens.</li> <li>Stir over medium-high heat for a further 2 minutes or until very thick.</li> <li>Stir in the chorizo and parsley. Season with pepper. Transfer to a shallow container. Set aside to cool slightly. Cover and place in the fridge for 4 hours or overnight to set.</li> <li>Place the extra flour, egg and breadcrumbs in separate bowls. Use floured hands to roll table spoonfuls of chorizo mixture into 8cm-long croquettes.</li> <li>Roll each croquette in flour and shake off excess.</li> <li>Dip in egg, then in breadcrumbs to coat. Place on a baking tray lined with baking paper.</li> <li>Add oil to a large saucepan to come 5cm up the side of the pan. Heat to 170°C over medium-high heat (when oil is ready a cube of bread will turn golden brown in 20 seconds).</li> <li>Cook croquettes, in 3 batches, turning occasionally, for 1 to 2 minutes or until golden and heated through. Smoked chicken, sun-dried tomato and basil croquettes

<p>This smoked chicken, sun-dried tomato and basil croquette recipe is perfect when you’re entertaining. These irresistible savouries can be prepared completely ahead, so, close to serving, all you'll need to do is fry them.</p> <p><strong><span style="text-decoration: underline;">Serves:</span> </strong>40</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>100g flour</li> <li>3 eggs, lightly beaten</li> <li>1 cup dry white breadcrumbs</li> <li>½ cup panko breadcrumbs</li> <li>Oil for deep-frying</li> <li>Basil pesto, to serve</li> <li>Micro-greens for garnish, to serve</li> </ul> <p> <strong>Filling</strong></p> <ul> <li>1 small onion, finely chopped</li> <li>90g butter</li> <li>90g flour</li> <li>1 cup milk</li> <li>¾ cup chicken stock</li> <li>80g sun-dried tomatoes, finely chopped</li> <li>½ cup basil leaves, finely chopped</li> <li>120g smoked chicken, finely chopped</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <p>1. To make the filling, cook onion in butter in a large saucepan over low heat until translucent.</p> <p>2. Increase heat to medium and add flour. Stir until cooked, about 1 minute.  </p> <p>3. Gradually add milk and stock, stirring constantly until mixture boils and becomes very thick.</p> <p>4. Add sun-dried tomatoes, basil and chicken and season to taste. Transfer to a shallow dish, cool and chill for several hours.  </p> <p>5. To make the croquettes, place flour, egg and combined breadcrumbs in 3 separate bowls.</p> <p>6. Scoop tablespoonfuls of chilled filling and form into small croquette shapes.</p> <p>7. Dust in flour, coat with egg then with breadcrumbs.</p> <p>8. Place on a lined baking tray and chill at least 30 minutes or until ready to fry.  </p> <p>9. Fry croquettes in batches in a deep fryer, or in a deep pan with about 5cm of oil, for about 3 minutes or until golden. Drain on crumpled paper towels.</p> <p>10.
