How do I keep my fruit, veggies and herbs fresh longer? Are there any ‘hacks’?

<div class="theconversation-article-body"><em><a href="https://theconversation.com/profiles/senaka-ranadheera-199225">Senaka Ranadheera</a>, <a href="https://theconversation.com/institutions/the-university-of-melbourne-722">The University of Melbourne</a></em></p> <p>We all know <a href="https://theconversation.com/frozen-canned-or-fermented-when-you-cant-shop-often-for-fresh-vegetables-what-are-the-best-alternatives-131678">fresh produce is good for us</a>, but fruit, vegetables and herbs have a tendency to perish quickly if left uneaten.</p> <p>This is because <a href="https://www.sciencedirect.com/science/article/abs/pii/S2212429219305188">even after harvesting</a>, produce from living plants tends to continue its biological processes. This includes respiration: producing energy from stored carbohydrates, proteins and fats while releasing carbon dioxide and water vapour. (Ever found a sprouting potato in your pantry?)</p> <p>On top of that, fresh produce also <a href="https://www.mdpi.com/journal/agriculture/special_issues/quality_safety_fresh_produce">spoils easily thanks to various microbes</a> – both harmless and ones that can cause disease, called pathogens.</p> <p>Simply chucking things in the fridge won’t solve the problem, as different types of plants will react differently to how they’re stored. So, how can you combat food waste and keep produce fresh for longer? Fortunately, there are some helpful tips.</p> <h2>Freshness and quality begin at the farm</h2> <p>Farmers always aim to harvest produce when it’s at an optimal condition, but both pre-harvest and post-harvest factors will affect freshness and quality even before you buy it.</p> <p>Pre-harvest factors are agricultural, such as climatic conditions, soil type and water availability. <a href="https://www.sciencedirect.com/science/article/abs/pii/S2212429219305188">Post-harvest factors</a> include washing and cleaning after harvesting, transportation and distribution, processing and packaging, and storage.</p> <p>As consumers we can’t directly control these factors – sometimes the veggies we buy just won’t be as good. But we can look out for things that will affect the produce once we bring it home.</p> <p>One major thing to look out for is bruised, wounded or damaged produce. This can happen at any stage of post-harvest handling, and can really speed up the <a href="https://www.sciencedirect.com/science/article/abs/pii/S0308814609001411">decay of your veggies and fruit</a>.</p> <p>Moisture loss through damaged skin speeds up deterioration and nutrient loss. The damage also makes it easier for <a href="https://www.sciencedirect.com/science/article/pii/S2468014119301943">spoilage microbes</a> to get in.</p> <h2>To wash or not to wash?</h2> <p>You don’t need to wash your produce before storing it. A lot of what we buy has already been washed commercially. In fact, if you wash your produce and can’t get it completely dry, the added moisture could speed up decay in the fridge.</p> <p>But washing produce <a href="https://theconversation.com/do-we-really-have-to-wash-fruit-and-vegetables-53039">just before you use it</a> is important to remove dirt and pathogenic bugs.</p> <p>Don’t use vinegar in your washing water despite what you see on social media. Studies indicate <a href="https://pubmed.ncbi.nlm.nih.gov/16496573/">vinegar has no effect</a> on lowering microbial loads on fresh produce.</p> <p>Similarly, don’t use baking soda. Even though there’s some evidence baking soda <a href="https://pubs.acs.org/doi/10.1021/acs.jafc.7b03118">can remove pesticide residues</a> from the surface of some produce, it’s not advisable at home. Just use plain tap water.</p> <h2>Location, location, location</h2> <p>The main thing you need is the correct type of packaging and the correct location – you want to manage moisture loss, decay and ripening.</p> <p>The three main storage options are on the counter, in the fridge, or in a “cool, dry and dark place”, such as the pantry. Here are some common examples of produce and where best to put them.</p> <p>Bananas, onion, garlic, potatoes, sweet potato and whole pumpkin will do better in a dark pantry or cupboard. Don’t store potatoes and onions together: onions produce a gas called ethylene that makes potatoes spoil quicker, while the high moisture in potatoes spoils onions.</p> <p>In fact, don’t store fruits such as apples, pears, avocado and bananas together, because these fruits <a href="https://www.tandfonline.com/doi/full/10.1080/15538362.2013.748378#:%7E:text=%27Malindi%27%20had%20higher%20respiration%20rates,retention%20in%20fruit%20during%20ripening">release ethylene gas</a> as they ripen, making nearby fruits ripen (and potentially spoil) much faster. That is, unless you <em>do</em> want to ripen your fruits fast.</p> <p>All leafy greens, carrots, cucumbers, cauliflower and broccoli will do best in the low-humidity drawer (crisper) in the fridge. You can put them in perforated plastic bags to retain moisture but maintain air flow. But don’t put them in completely sealed bags because this can slow down ripening while <a href="https://ucanr.edu/sites/hdnmastergardeners/files/338860.pdf">trapping carbon dioxide</a>, leading to decay and bad smells.</p> <p>Some fruits will also do best in the fridge. For example, apples and citrus fruits such as oranges can keep fresh longer in the fridge (crisper drawer), although they can stay at room temperature for short periods. However, don’t store watermelon in the fridge for too long, as it will lose its flavour and deep red colour if kept refrigerated <a href="https://ucanr.edu/sites/hdnmastergardeners/files/338860.pdf">for longer than three days</a>.</p> <p>Most herbs and some leafy vegetables – like celery, spring onions and asparagus – can be kept with stems in water to keep them crisp. Keep them in a well-ventilated area and away from direct sunlight, so they don’t get too warm and wilt.</p> <figure><iframe src="https://www.youtube.com/embed/cHu10C1DAds?wmode=transparent&amp;start=0" width="440" height="260" frameborder="0" allowfullscreen="allowfullscreen"></iframe><figcaption><span class="caption">Experimenting at home is a good way to find the best ways to store your produce.</span></figcaption></figure> <h2>Fight food waste and experiment</h2> <p><strong>Don’t buy too much.</strong> Whenever possible, buy only small amounts so that you don’t need to worry about keeping them fresh. Never buy bruised, wounded or damaged produce if you plan to keep it around for more than a day.</p> <p><strong>“Process” your veggies for storage.</strong> If you do buy a large quantity – maybe a bulk option was on sale – consider turning the produce into something you can keep for longer. For example, banana puree made from really ripe bananas can be <a href="https://www.sciencedirect.com/science/article/abs/pii/S0023643817300853">stored for up to 14 days at 4°C</a>. You can use <a href="https://theconversation.com/frozen-canned-or-fermented-when-you-cant-shop-often-for-fresh-vegetables-what-are-the-best-alternatives-131678">freezing, blanching, fermentation and canning</a> for most vegetables.</p> <p><strong>Consider vacuum sealing.</strong> Vacuum packaging of vegetables and berries can keep them fresh longer, as well. For example, vacuum-sealed beans can keep up to 16 months in the fridge, but will last only about <a href="https://www.vacpac.com.au/vacuum-sealed-life-expectancy-how-long-will-my-vacuum-sealed-products-last">four weeks in the fridge unsealed</a>.</p> <p><strong>Keep track.</strong> Arrange your fridge so you can see the produce easily and use it all before it loses freshness.</p> <p><strong>Experiment with storage hacks.</strong> Social media is full of tips and hacks on how best to store produce. Turn your kitchen into a lab and try out any tips you’re curious about – they might just work. You can even use these experiments as a way to teach your kids about the importance of reducing food waste.</p> <p><strong>Grow some of your own.</strong> This isn’t <a href="https://theconversation.com/growing-your-own-food-and-foraging-can-help-tackle-your-ballooning-grocery-bill-heres-how-216264">feasible for all of us</a>, but you can always try having some herbs in pots so you don’t need to worry about keeping them fresh or using up a giant bunch of mint all at once. <a href="https://theconversation.com/health-check-are-microgreens-better-for-you-than-regular-greens-73950">Growing your own microgreens</a> could be handy, too.<!-- Below is The Conversation's page counter tag. Vinegar and baking soda: a cleaning hack or just a bunch of fizz?

<p><em><a href="https://theconversation.com/profiles/nathan-kilah-599082">Nathan Kilah</a>, <a href="https://theconversation.com/institutions/university-of-tasmania-888">University of Tasmania</a></em></p> <p>Vinegar and baking soda are staples in the kitchen. Many of us have combined them in childhood scientific experiments: think fizzy volcanoes and geysers.</p> <p>But people also frequently mix vinegar and baking soda to produce a reportedly effective household cleaner. Unfortunately, the chemistry behind the bubbly reaction doesn’t support the cleaning hype. The fizzy action is essentially <a href="https://theconversation.com/six-surprising-things-about-placebos-everyone-should-know-220829">a visual “placebo</a>”, formed by the combination of an acid and a base.</p> <p>So, how does it work, and is it worth using these chemicals for cleaning? To understand all this, it helps to know a little more about chemistry.</p> <h2>What’s an acid?</h2> <p>Foods with a sour taste typically contain acids. These include citric acid in lemon juice, malic acid in apples, lactic acid in yoghurt and <a href="https://theconversation.com/kitchen-science-everything-you-eat-is-made-of-chemicals-56583">phosphoric acids in soft drinks</a>. Most vinegars contain around 4–10% acetic acid, the rest is water and small amounts of flavour chemicals.</p> <p>There are other naturally occurring acids, such as formic acid in ant bites and hydrochloric acid in our stomachs. Industrially, sulfuric acid is used in mineral processing, nitric acid for <a href="https://theconversation.com/what-is-ammonium-nitrate-the-chemical-that-exploded-in-beirut-143979">fertiliser manufacturing</a> and the highly potent hydrofluoric acid is used to etch glass.</p> <p>All of these acids share similar properties. They can all release hydrogen ions (positively charged atoms) into water. Depending on their potency, acids can also dissolve minerals and metals through various chemical reactions.</p> <p>This is why vinegar is an excellent cleaner for showers or kettles – it can react with and dissolve mineral deposits like limescale.</p> <p>Other common acidic cleaning ingredients are oxalic acid, used for revitalising timber decks, hydrochloric acid in concrete and masonry cleaners, and sulfamic acid in potent toilet cleaners.</p> <h2>What’s a base?</h2> <p>In chemistry, bases – the opposite of acids in many ways – can bind, rather than release hydrogen ions. This can help lift and dissolve insoluble grime into water. Bases can also break apart fat molecules.</p> <p>Baking soda (also known as sodium hydrogen carbonate, sodium bicarbonate, or bicarb) is a relatively weak base. Stronger common bases include sodium carbonate (washing soda), sodium hydroxide (lye) and ammonia.</p> <p><a href="https://theconversation.com/spill-at-a-nuclear-facility-shows-potential-burn-risks-from-a-household-chemical-112763">Sodium hydroxide</a> is a potent drain cleaner – its strong base properties can dissolve fats and hair. This allows blockages to be broken down and easily flushed away.</p> <h2>Mixing a base and an acid</h2> <p>Mixing vinegar and baking soda causes an immediate chemical reaction. This reaction forms water, sodium acetate (a salt) and carbon dioxide – the fizzy part.</p> <p>The amount of carbon dioxide gas that is produced from baking soda is remarkable – one tablespoon (around 18 grams) can release over <a href="https://www.chemedx.org/JCESoft/jcesoftSubscriber/CCA/CCA8/MAIN/8/06/2/4/movie.html">five litres of gas</a>! But only if you add enough acid.</p> <p>Reactions in chemistry often use equal quantities of chemical reagents. A perfect balance of acetic acid and baking soda would give you just water, carbon dioxide and sodium acetate.</p> <p>But the majority of vinegar and bicarb cleaner recipes use a large excess of one or the other components. An example from TikTok for a DIY oven cleaner calls for one and a half cups of baking soda and one quarter cup of vinegar.</p> <p>Crunching the numbers behind the chemical reaction shows that after the fizz subsides, over 99% of the added baking soda remains. So the active cleaning agent here is actually the baking soda (and the “elbow grease” of scrubbing).</p> <p>Ovens can be cleaned much more rigorously with stronger, sodium hydroxide based cleaners (although these are also more caustic). Many modern ovens also have a self-cleaning feature, so read your product manual before reaching for a chemical cleaner of any sort.</p> <h2>What about the sodium acetate?</h2> <p>Devotees of vinegar and baking soda mixtures might be wondering if the product of the fizzy reaction, sodium acetate, is the undercover cleaning agent.</p> <p>Unfortunately, sodium acetate is an even weaker base than baking soda, so it doesn’t do much to clean the surface you’re trying to scrub.</p> <p>Sodium acetate is used in <a href="https://www.youtube.com/watch?v=vABpel-11Nc">crystallisation-based heating packs</a> and as a concrete sealant, but not typically as a cleaner.</p> <p>Fun fact: sodium acetate can be combined with acetic acid to make a crystalline <a href="https://theconversation.com/busting-the-myth-that-all-food-additives-are-bad-a-quick-guide-for-label-readers-82883">food additive</a> called sodium diacetate. These crystals give the vinegar flavour to <a href="https://www.youtube.com/watch?v=N0hEutu_goY">salt and vinegar chips</a> without making them soggy.</p> <h2>Sorry to burst your bubbles</h2> <p>There are a few rare cases where mixing vinegar and baking soda may be useful for cleaning. This is where the bubbling has a mechanical effect, such as in a blocked drain.</p> <p>But in most cases you’ll want to use either vinegar or baking soda by itself, depending on what you’re trying to clean. It will be less <a href="https://theconversation.com/visually-striking-science-experiments-at-school-can-be-fun-inspiring-and-safe-banning-is-not-the-answer-195362">visually exciting</a>, but it should get the job done.</p> <p>Lastly, remember that mixing cleaning chemicals at home can be risky. Always carefully read the product label and directions before engaging in DIY concoctions. Lots of women try herbs like black cohosh for menopausal symptoms like hot flushes – but does it work?

Most Australian women go through menopause between <a href="https://www.nature.com/articles/nrdp20154">45 and 55</a> years of age, with the average age being 51 years, although some women may be younger.</p> <p>Hot flushes and night sweats are <a href="https://www.nature.com/articles/nrendo.2017.180">typical symptoms</a> of menopause, with vaginal dryness, muscle and joint pains, mood changes and sleep disturbance also commonly reported. Up to <a href="https://pubmed.ncbi.nlm.nih.gov/25706184/">75% of women</a> experience menopausal symptoms, with nearly 30% severely affected.</p> <p>These symptoms can negatively impact day-to-day life and wellbeing. The main therapies available include menopausal hormone therapy (MHT) and non-hormonal prescription therapy. Some women will elect to try complementary and alternative medicines, such as herbal medicines and nutritional supplements. Black cohosh is one of them.</p> <h2>What causes hot flushes</h2> <p>The cause of hormonal hot flushes (also called hot flashes) still isn’t completely understood, but the decline in oestrogen at menopause appears to play a role in a process that involves the <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3833827/">area of the brain that regulates temperature</a> (the hypothalamus).</p> <p>Factors linked to a greater likelihood of hot flushes include <a href="https://pubmed.ncbi.nlm.nih.gov/19675142/">being overweight or having obesity</a> and <a href="https://pubmed.ncbi.nlm.nih.gov/25706184/">smoking</a>.</p> <p>MHT, previously known as hormone replacement therapy (HRT), usually includes oestrogen and is the <a href="https://pubmed.ncbi.nlm.nih.gov/26444994/">most effective treatment</a> for menopausal symptoms, such as hot flushes. But women may choose complementary and alternative medicines instead – either because they shouldn’t take hormone therapy, for example because they have breast cancer, or because of personal preference.</p> <p>Close <a href="https://pubmed.ncbi.nlm.nih.gov/26224187/">to 40%</a> of Australian women report using complementary and alternative medicines for menopausal symptoms, and up to 20% using them specifically to treat hot flushes and sweats.</p> <h2>A long history</h2> <p>Complementary and alternative medicines have a long history of use in many cultures. Today, their potential benefits for menopausal symptoms are promoted by the companies that make and sell them.</p> <p>The <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6419242/">complementary and alternative medicines</a> women often try for menopausal symptoms include phytoestrogens, wild yam, dong quai, ginseng and black cohosh.</p> <p>Black cohosh (plant name <em>Cimicifuga racemosa</em>) was <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6599854/">traditionally</a> used by Native Americans to treat a variety of health concerns such as sore throat, kidney trouble, musculoskeletal pain and menstrual problems. It is now a popular herbal choice for hot flushes and night sweats, as well as vaginal dryness and mood changes.</p> <p>There are <a href="https://pubmed.ncbi.nlm.nih.gov/37252752/">many theories</a> for how the active ingredients in black cohosh might work in the body, such as acting like oestrogen, or affecting chemical pathways in the brain. But despite extensive research, the <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6599854/">evidence to support these theories remains inconclusive</a>.</p> <p>It is also not clear whether black cohosh is effective for hot flushes. Results from individual studies are mixed, with <a href="https://pubmed.ncbi.nlm.nih.gov/17565936/">some</a> finding black cohosh improves hot flushes, while <a href="https://pubmed.ncbi.nlm.nih.gov/18257142/">others</a> have found it doesn’t.</p> <p>A 2012 <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6599854/">review</a> combined all the results from studies of menopausal women using black cohosh to that date and found overall there was no proof black cohosh reduces hot flushes more effectively than an inactive treatment (placebo). <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6599854/">This review</a> also revealed that many studies did not use rigorous research methods, so the findings are hard to interpret.</p> <p>A more recent <a href="https://pubmed.ncbi.nlm.nih.gov/33021111/">review</a> of clinical trials claimed black cohosh may ease menopausal symptoms, but the included studies were mostly small, less than six months long, and included women with mild symptoms.</p> <p>There is also no meaningful evidence black cohosh helps other symptoms of menopause, such as vaginal symptoms, sexual problems, or poor general wellbeing, or that it protects against bone loss.</p> <p>Evidence for how black cohosh is absorbed and metabolised by the body is also lacking, and it is not known what dose or formulation is best to use.</p> <p>More good quality studies are needed to decide whether black cohosh works for hot flushes and other menopausal symptoms.</p> <h2>Is it safe to try?</h2> <p>A <a href="https://pubmed.ncbi.nlm.nih.gov/33021111/">review of studies</a> suggests black cohosh is safe to use, although many of the studies have not reported possible adverse reactions in detail. Side effects such as gastrointestinal upset and rashes may occur.</p> <p>While there have been <a href="https://www.mja.com.au/journal/2008/188/7/liver-failure-associated-use-black-cohosh-menopausal-symptoms#0_i1091948">rare reports of liver damage</a>, there is <a href="https://pubmed.ncbi.nlm.nih.gov/21228727/">no clear evidence</a> black cohosh was the cause. Even so, in Australia, black cohosh manufacturers and suppliers are required to put a warning label for the potential of harm to the liver on their products.</p> <p>It is recommended black cohosh is not used by women with menopausal symptoms <a href="https://www.canceraustralia.gov.au/cancer-types/breast-cancer/impacted-by-breast-cancer/physical-changes/menopause/treatments-menopausal-symptoms">after breast cancer</a>, as its safety after breast cancer is uncertain. All women should consult with their doctor before using black cohosh if they are taking other medications in case of possible drug interactions.</p> <p>Many women like to try herbal therapies for hot flushes and other menopausal symptoms. “Grandma meant Elmo”: Cake-maker reveals hilarious baking blunder

<p>An American baker has left the internet in stitches after misreading her customer’s custom cake request, instead delivering a baking blunder for the Sesame Street history books.</p> <p>In a video posted to her TikTok account, Brianna Romero - who is known professionally as Brinni Cakes - confessed her mistake to the world, recounting the story of how a recent order from a grandmother had led her to the creation of her new friend ‘Emo Elmo’.</p> <p>“So my worst nightmare happened,” she said, with audio playing over a timelapse of Brianne constructing another cake. “Last week a lady DMed me and asked me if I could make her an emo cake, and I was thinking ‘yes, of course, I love emo and I love goth, and I know I’ve been perfecting my black frosting so I’m ready for this’.” </p> <p>Brianna went on to explain that she’d gotten all of her customer’s information, and set to work. However, an hour before she was set to deliver the cake, she decided to offer the woman a number candle - an offer that was soon accepted. </p> <p>“She said ‘yes, the cake is for my granddaughter and she’s turning four’”, Brianna explained in the clip. “And I thought that that was a little bit weird, ‘cause I don’t know an emo four year old.”</p> <p>After trying to understand the weird request, Brianna figured that the little girl must just be a fan of something like Netflix’s Wednesday series. Unfortunately, this was not the case. </p> <p>“Something felt wrong,” she noted, before describing how she’d reach out again to ask what the theme of the party was, only to find out it was Sesame Street. </p> <p>“So my heart sinks a little bit because this is now making sense to me,” she said. “The stuff of nightmares”: Baked to imperfection

<p>Some people are destined for the kitchen, while others may be better suited to a career in comedy, if these cake decorating disasters are anything to go by.</p> <p>Even armed with a visual guide and the world’s best intentions, some bakers are just in for a wild time - and thanks to some good-natured social media posts, we can all enjoy the colourful consequences right along with them. </p> <p>Lucy was one such baker to face a betrayal from her cake. Posting to the Facebook page Woolies/Coles Mudcake Hacks, she shared her experience trying to follow professional baker Tegan ‘Tigga’ Maccormack’s Bluey birthday cake tutorial. </p> <p>Needless to say, their end results weren’t exactly mirror images.</p> <p>"Enjoy this absolute abomination - it looked easy on TikTok," Lucy wrote, attaching a picture of her hilarious creation. </p> <p>Fellow Facebook users loved her attempt, with some even trying to make Lucy feel better.</p> <p>One informed her that although it was nothing like the inspiration picture, it was “very cute”.</p> <p>“OMG I genuinely love it!” another declared. “It made me smile, thank you for sharing.”</p> <p>Meanwhile, one mum wrote that her seven-year-old encouraged Lucy to “keep trying!”, before stating that “it looks so bad she should probably eat the whole thing.” </p> <p>On Reddit, someone had another unfortunate cake story to share - though this time they weren’t the baker responsible, simply the customer who got something they certainly hadn’t paid for. </p> <p>“The ice cream cake we ordered vs what we received,” they wrote, sharing the image of two monkey cakes. One, the ‘expectation’ image, was a smoothly iced monkey head. The second, the ‘received’ product, was at least discernible as a monkey, even if the ‘smooth’ icing job left a lot to be desired. </p> <p>“This was an ice cream cake from Baskin Robbins," it was explained. “They usually come out exactly as pictured online, but this time was truly spectacular."</p> <p>And while many thought this particular approach to replicating the vision was hilarious, most were of the opinion that this had not actually been a failure, but instead an improvement. According to the majority in the comments, “frosting tastes much better than fondant” anyway.</p> <p>Another Reddit user referenced a tweet they’d seen of another cake disaster, this time of a Minnie Mouse cake that someone had purchased for their niece, and the nightmare they’d gotten in return. </p> <p>“I saw that it was posted in Arabic on Twitter, and it was pretty funny,” the Reddit user said, “so I just wanted to share it with a wider audience!"</p> <p>“The cake's shininess is the stuff of nightmares,” was all one had to say about it. </p> <p>“I would not have paid for that abomination,” another said. </p> <p>Thankfully for the individual who had dealt with the cake firsthand, they were able to return it for a full refund. </p> <p>"The cake was for my sister for her birthday," they told TODAY. Recipe: Cheesy potato bake

<p>The perfect accompaniment to any meal, everyone needs a great potato bake recipe in his or her repertoire and this one is delicious (and simple). </p> <p><strong>Serves:</strong> Six</p> <p><strong>Preparation time:</strong> 20 minutes</p> <p><strong>Cooking time:</strong> One hour 30 minutes</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span> </strong></p> <ul> <li>60g of butter, plus extra for greasing</li> <li>2 ⅓ cups milk</li> <li>400ml cream</li> <li>2 cups of cheese (tasty or parmesan work well), grated</li> <li>1½ kg potatoes (Sebago, Desiree, or similar), peeled and thinly sliced1 onion, finely chopped</li> <li>3 garlic cloves</li> <li>1 tablespoon fresh thyme leaves</li> <li>Salt and pepper to season</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Preheat oven to 180 °C or 160 °C for fan forced. Lightly grease a seven-cup ovenproof dish. </li> <li>Melt butter in a heavy-based saucepan over medium heat. Slowly add milk and cream, stirring constantly until well combined. </li> <li>Add one and half cups of cheese. Stir to combine. </li> <li>Layer one third of potatoes over base overlapping slightly. Top with half the onion, garlic, thyme and one third of cheese sauce. Season with salt and pepper. Repeat two more times. </li> <li>Brush a sheet of foil with oil and place oil-side down over the potato. Seal tightly. Bake for 45 minutes. Uncover and brush top with melted butter. 7 tips to maintain your herb garden

<p>Whether you love to cook with fresh herbs or are just looking to add something new to your garden, starting your own herb garden is very rewarding. To start your garden off the right way, here are seven tips that will help your herb garden flourish.  </p> <p><strong>1. Choose healthy herbs</strong></p> <p>From the get go, when you purchase your herb you need to make sure it is in a healthy condition. Look for bright colours, no bugs, no eggs and plenty of foliage. Sickly looking herbs should be quarantined from all the other herbs to ensure they do not get infested.  </p> <p><strong>2. Select the right environment</strong></p> <p>If you’ve decided you want your herb garden in a certain area, make sure those herbs can live in that kind of lighting and soil condition. Planting rosemary in a humid area will cause it to die within weeks due to wet feet. The herbs that need to be in the sun will become pale and weak if they do not get enough light. If you don’t have a completely sunny or shady area, then plants your herbs in pots and move them accordingly.</p> <p><strong>3. Prune regularly</strong></p> <p>All gardeners know that not pruning is a mistake that will detrimentally hinder the growth of your garden. If you don’t prune your herbs, they will only grow taller on a few stems. Lack of pruning will cause the leaves to age, dry and fall off. Make sure you regularly prune your herbs.</p> <p><strong>4. Don’t overcrowd</strong></p> <p>When you purchase your herb, look at the height and width of the fully-grown plant. Growing too many herbs in the same vicinity will be a waste of time and money as the herbs won’t grow a healthy root system. Without a healthy root system, the herb will struggle to survive and thrive.</p> <p><strong>5. Stop flower growth</strong></p> <p>When herbs grow flowers, it’s a sign that they are at the end of their life cycle. Once you see a flower forming, pinch off the entire thing to stop it from hindering the growth of the herb. If the herb is persistent then cut the entire stem off.</p> <p><strong>6. Fertilise and water</strong></p> <p>Herbs need a water schedule in order for them to grow. Never wash out the leaves; pour the water on the soil. Mulch will assist in locking the moisture into the soil. A fertiliser is also important as it will boost much needed growth due to the herb being harvested multiple times in the growing season.</p> <p><strong>7. Watch what you spray</strong></p> <p>Herbs should never be exposed to chemicals that will be harmful to those eating them. Even if a spray is safe for animal and pets you need to ensure that it says it is safe for edibles. <p>There’s an indescribable pleasure in sauntering out to your garden to pick freshly grown herbs to throw into your homemade dish. Anyone with an herb gardens would agree herbs from your personal garden gives food that extra oomph even freshly bought herbs don’t bring. What’s better is growing herbs is easy! How to grow herbs will depend on the particular herb you’re growing but here are some general rules to consider:</p> <p><strong>Choose herbs you will use</strong></p> <p>Think about what herbs you use for daily cooking. Popular options that enhance many dishes include oregano, basil, thyme and rosemary.</p> <p><strong>Provide sunshine</strong></p> <p>Most herbs need at least 6 or more hours of sunlight a day. There are some shade-loving exceptions like mint but Mediterranean herbs, such as rosemary, thyme, lavender and oregano, are drought-hardy and thrive in full sun. However, don’t scorch herbs. Place in an undercover area which receives sunlight.</p> <p><strong>Invest in a good sized pot </strong></p> <p>Don’t crowd your seedlings into a small sized pot. Provide room for them to grow and ensure it is deep enough for the roots to grow.</p> <p><strong>Good drainage </strong></p> <p>Herbs do not enjoy consistently damp or wet soil. Place gravel or stones at bottom of the pot to ensure good drainage.</p> <p><strong>Quality soil</strong></p> <p>Without good soil herbs will not grow properly. Supplement the soil with compost to give seedlings a boost.</p> <p><strong>Water moderately </strong></p> <p>During the early stages of growing herbs, you should water well. Once they are grown though, water moderately making sure you don’t over-water or under-water.</p> <p><strong>Wait before harvesting </strong></p> <p>Allow your herbs to grow before you start harvesting them. Wait into they are well and truly established (around twice the size) before plucking.</p> <p><strong>Prune regularly </strong></p> <p>Once your herbs have grown though don’t skimp on the pruning. How I mastered baking a yeast bread from scratch, and saved money doing it

<p><span style="font-weight: 400;">By Jeanne Sidner</span></p> <p><span style="font-weight: 400;">My introduction to baking started with the home-kitchen classic that cracks open the oven door for so many – chocolate chip cookies. It was the 1970s, and most of the mums in our largely Catholic neighbourhood were busy raising big families. For the girls in my house, that meant our mother made sure we knew our way around the kitchen. At the flour-dusted table, Mum taught eight-year-old me how to make the cookies perfectly chewy with a crispy exterior. (The big secret: Always chill your dough.)</span></p> <p><span style="font-weight: 400;">So from a young age, I was crystal clear on the power of a baked-to-perfection cookie to make people happy. Baking cookies – then brownies, cakes and pies – became my hobby and a tasty form of social currency. First I used my skills with butter and sugar to impress a series of teenage boyfriends. In time, the fresh goodies were left on doorsteps to welcome new neighbours and set out in the break room for co-workers. Baking was my superpower.</span></p> <p><span style="font-weight: 400;">A few years ago, I became the content director for Taste of Home, Reader’s Digest’s sister magazine and website that celebrates the treasured recipes of home cooks. I’d never been more excited for a new job, but privately I worried that my baking chops wouldn’t measure up. Why? I had a secret as dark as an oven with a burned-out light bulb: While I had baked sweets my whole life, I’d never made a yeast bread from scratch.</span></p> <p><span style="font-weight: 400;">Still, this was no time for excuses. I was a baker, now one with Taste of Home attached to my name. I may have been intimidated by bread, but it was time. I wanted in.</span></p> <p><span style="font-weight: 400;">Getting started, I found Instagram to be a friend. A basic no-knead bread was the one I was seeing online overlaid with dreamy filters. People described it as easy, and to be honest, the thought of removing even one intimidating variable – kneading – was enough to get me to buy two kilograms of bread flour and dive in.</span></p> <p><span style="font-weight: 400;">I gathered everything I’d need (“be prepared” is the first rule of any baking), including my mum’s trusty Pyrex. It had seen me through my first days as a baker, so I was counting on it to work its magic. I had an easy Taste of Home recipe all set on my iPad. I mixed the flour, salt, and yeast and made sure the water temperature was just right – 38 to 46 degrees – before pouring it in.</span></p> <p><span style="font-weight: 400;">And then it happened – or didn’t happen. I followed the instructions to the letter, but my dough didn’t rise. Somehow, impossibly, it looked smaller. Sludgy, gooey, wet with a few bubbles. Sad.</span></p> <p><span style="font-weight: 400;">Three hours later, after I’d resisted the urge to keep checking on it like a nervous mum with a newborn, a puffy dough filled the bowl. I hadn’t killed it; it was just … sleeping. A quick fold, a second rise, and then my bread went into my Dutch oven and off to bake.</span></p> <p><span style="font-weight: 400;">Thirty minutes later, I took it out. Sure, it was slightly misshapen, but in my eyes, it was golden-brown, crusty perfection, right down to the yeasty-sweet hit of steam coming from its top.</span></p> <p><span style="font-weight: 400;">Naturally, the first thing I did was grab my phone and hop on Instagram, positioning my beautiful bread just so in a shining stream of daylight on a wooden cutting board. No one needed to know it was my first yeast bread ever – or how close it came to getting scraped into the garbage can. The online reactions started almost immediately – heart emojis and comments like “This looks DELISH!” from my friends.</span></p> <p><span style="font-weight: 400;">Finally I cut into that lovely brown crust and doled out slices to my husband and kids. Those slices led to seconds, then thirds, each piece slathered with softened butter and a little sprinkle of salt. I made my family perhaps happier with slices of warm, buttered homemade bread than I had with all the sweets combined. </span></p> <p><span style="font-weight: 400;">At last, I was a bread baker – despite yeast’s best attempts to intimidate me on this first try. No more feeling inferior or afraid. Now I make bread and homemade pizza crust regularly. “Remembering Herb”: Nicole Kidman pays tribute with throwback snaps

<p><span style="font-weight: 400;">Nicole Kidman has shared an emotional tribute to late photographer Herb Ritts, along with a series of throwback photos.</span></p> <p><span style="font-weight: 400;">“Remembering Herb </span><span style="font-weight: 400;">✨,” the </span><em><span style="font-weight: 400;">Big Little Lies</span></em><span style="font-weight: 400;"> star captioned the post, alongside photos of herself with a bob cut, heavy eye makeup, and wearing a tank top.</span></p> <p><span style="font-weight: 400;">Other stars commented on Kidman’s post with their own tributes to the photographer.</span></p> <p><span style="font-weight: 400;">“Beautiful and he was great x,” singer Carole Bayer Sager wrote.</span></p> <p><span style="font-weight: 400;">“[His] photos were and are so beautiful. Hugh Jackman reveals hilarious baking fail
