Slow-cooked chocolate lava cake

<p>I was experimenting one day and made a lava cake. It was OK, but not quite right, so I didn’t make it again. Then, after about 2 years, I thought, I’ll try it again but this time I’ll make it in the slow cooker. It was so much better, and since then I’ve made it again and again – it’s beautiful.</p> <p><strong><span style="text-decoration: underline;">Serves:</span></strong> 6-8</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>3½ cups brown sugar</li> <li>2 cups plain (all-purpose flour)</li> <li>6 tbsp. unsweetened cocoa powder</li> <li>4 tsp. baking powder</li> <li>1 tsp. salt</li> <li>1 cup milk</li> <li>4 tbsp. butter, melted</li> <li>1 tsp. vanilla extract</li> <li>3 cups boiling water</li> <li>Vanilla ice cream or cream, to serve</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Grease a slow cooker and line it with baking paper.</li> <li>In a large bowl, mix together 2 cups of the sugar, the flour, half the cocoa powder, and the baking powder and salt. Stir in the milk, melted butter and vanilla. Combine the remaining brown sugar with the remaining cocoa powder and add to the mixture. Pour the cake batter into the prepared slow cooker.</li> <li>Pour the boiling water over the top of the cake batter and resist all temptation to stir. Do not stir!</li> <li>Cover, putting a tea towel under the lid, and cook on HIGH for 2-2½ hours (depending on the size of your slow cooker), or until a skewer inserted into the middle of the cake comes out clean.</li> <li>Remove the slow cooker lid and set the cake aside to cool for 30 minutes before serving. Chocolate peanut butter lava cakes

<p>Rich, full of chocolate and has an amazing burst of peanut butter in every bite you will not want to share these lava cakes. </p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>300g bittersweet chocolate, chopped (or use chocolate drops)</li> <li>150g butter, cut into pieces</li> <li>3 egs</li> <li>3 egg yolks</li> <li>¾ cup caster sugar</li> <li>3 tbs flour</li> <li>6 heaped tbs peanut butter</li> <li>Cocoa powder for dusting</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <p>1. Preheat the oven to 200°C and grease a six-cup muffin tin.</p> <p>2. Sift cocoa powder over the greased tin. Line the bottoms of each muffin cup with baking paper (this is important, otherwise the cake may stick to the bottom).</p> <p>3. Place the chocolate and butter in a microwave-proof bowl, and microwave on low for 2 minutes. Stir well to combine and leave to cool for 5 minutes, or microwave for a little longer if it's not all homogeneous.</p> <p>4. In a separate bowl whisk together all of the eggs, egg yolks and sugar until well combined. Add the chocolate and butter to this mixture and mix well.</p> <p>5. Add the flour and fold through until just combined, do not over-mix.</p> <p>6. Spoon one spoonful of mixture into each muffin tin, then top each with a tbspn of peanut butter. Spoon the rest of the mixture over the top of the peanut butter until each muffin cup is 3/4 full. Don't fill them up any further than this, or they may overflow when baking.</p> <p>7. Bake for 14 minutes or until the top springs back when lightly pressed. Whilst baking, the tops will puff up, but when you take them out of the oven</p> <p>8. Leave to cool for 5 minutes on a wire rack, then run a knife around the edge of each cake to help it turn out easily. Turn out on to the wire rack, then transfer to plates to serve with a bit of cream on the side, if you want.          </p> <p><em><strong>Written by Chloe Kincaid.
