Baked ziti

<p>If you’re looking for a dish that’s similar to lasagne but doesn’t involve half as much fuss, baked ziti might just be the answer to your culinary prayers.</p> <p><strong><span style="text-decoration: underline;">Serves:</span> </strong>8</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>500 grams penne pasta</li> <li>Olive oil</li> <li>500 grams ground beef</li> <li>1 large onion, chopped</li> <li>3-4 garlic cloves, chopped</li> <li>1 tablespoon fresh rosemary (or basil), minced</li> <li>1 tablespoon Italian seasoning</li> <li>½ teaspoon red chilli flakes</li> <li>1 large jar of tomato based pasta sauce</li> <li>½ pound of mozzarella cheese, grated</li> <li>1 cup of ricotta cheese</li> <li>1 cup grated parmesan cheese</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>To begin, preheat your oven to 170 °C.</li> <li>Heat a large pot of water and bring to the boil. Add a tablespoon of salt then cook at a rolling boil until the pasta is al dente (edible but still a little firm to bite).</li> <li>Drain pasta with a colander and toss with a little bit of olive oil.</li> <li>Heat a tablespoon of olive oil in a large pan on medium high and add meat. Brown well.</li> <li>When meat is mostly brown, add onions and stir to combine.</li> <li>Sauté for about five minutes, until the onions are translucent and beginning to brown.</li> <li>Add garlic, rosemary or basil, Italian seasoning and red chilli flakes and stir.</li> <li>Cook for a minute, then add tomato sauce and bring to a simmer.</li> <li>Spread a thin layer of sauce in the bottom of a casserole pan.</li> <li>Dot the surface with half the ricotta cheese.</li> <li>Ladle a spoonful of sauce into the pasta, stir it well and then add the pasta to casserole.</li> <li>Pour the rest of the sauce over the pasta, dot the remaining ricotta cheese over the pasta, and sprinkle on top both the mozzarella and the Parmesan cheese.</li> <li>Bake for about 20 minutes, until the top is lightly browned and the cheese melted.</li> </ol> <p>Doesn’t that sound delicious? Three-cheese ziti pasta bake

<p>When the cold weather rolls in, there's nothing better than putting your oven to work: just put your dish in, close the door and let it do the work while you curl up on the couch. Anyone who loved <em>The Sopranos</em> will know all about baked ziti, the cheesy, layered Italian-American spin on pasta al forno. Here's a recipe to satisfy your inner wise guy.</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>2 tbsp. olive oil</li> <li>1 large onion, finely chopped</li> <li>4 garlic cloves, finely chopped</li> <li>800g (2 cans) diced tomato</li> <li>1 tsp salt</li> <li>½ tsp ground black pepper</li> <li>¼ tsp dried oregano</li> <li>1 cup roasted capsicum, thinly sliced</li> <li>200g mild cacciatore salami, thinly sliced</li> <li>½ cup pitted Kalamata olives</li> <li>750g ziti or penne pasta</li> <li>300g ricotta cheese</li> <li>300g buffalo mozzarella cheese, thinly sliced</li> <li>100g grated parmesan cheese</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Heat a large saucepan over medium heat and add the olive oil, onion and garlic. Reduce the heat to low and cook slowly for about 20 minutes until translucent and lightly caramelised.</li> <li>Add the diced tomato, salt, pepper and oregano and bring to a simmer. Simmer covered for 30 minutes, stirring occasionally, then stir through the capsicum, olives and 150g of the salami. Simmer for a further 20 minutes. Remove from the heat and set aside.</li> <li>Heat your oven to 180°C. Bring a large pot of salted water to the boil and cook the pasta for about three minutes less than the packet directions. It should be cooked, but very firm and still a little crunchy in the centre. Rinse with cold water, drain and return to the pot. Stir through a third of the pasta sauce.</li> <li>Place half the coated pasta into a large baking dish. Cover with another third of the pasta sauce and dollop over the ricotta cheese. Cover with the remaining pasta and another layer of the remaining pasta sauce. Cover with the mozzarella, scatter with the parmesan and place the reserved salami on top. Bake for 30 minutes until the cheese is melted and the pasta cooked. Grind over a little more black pepper and serve.</li> </ol> <p>Have you ever tried a recipe inspired by a TV show or film?
