Garlic and parmesan roasted pumpkin

This simple side dish makes use of the sweet, nutty taste of butternut pumpkin, combining it with the irresistible flavours of garlic and parmesan.

Ingredients:

  • 500g butternut pumpkin cut up into small chunks
  • 4 tablespoons butter, melted
  • 3 cloves of garlic, minced
  • Salt
  • Pepper
  • Parsley leaves, finely chopped
  • ⅓ cup grated parmesan cheese
